I cook it in a disposable pan - who wants to do dishes Christmas morning?! &lt;br /&gt;&lt;/div&gt;&lt;div style="color: black; padding-left: 20px;"&gt;&amp;nbsp;&lt;/div&gt;&lt;div style="color: black; padding-left: 20px;"&gt;1 pkg. hash browns with onions&lt;br /&gt;1 doz. eggs&lt;br /&gt;1 green pepper, chopped&lt;br /&gt;2 c. sharp Cheddar cheese, grated&lt;br /&gt;1 c. milk&lt;br /&gt;Salt &amp;amp; pepper to taste&lt;/div&gt;&lt;div style="color: black; padding-left: 20px;"&gt;&amp;nbsp;&lt;/div&gt;&lt;div style="color: black;"&gt;Beat eggs and milk. In a large skillet, saute onion, green pepper and garlic in oil. Cook until tender.&lt;br /&gt;2. Add cilantro. Stir in beans, water, salt, cumin and pepper.&lt;br /&gt;3. Transfer to slow cooker&lt;br /&gt;4. Cover. Are you tired of turkey and mashed potatoes for dinner and lunch and snack and...&lt;br /&gt;&lt;br /&gt;Try these recipes for a nice change of pace&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Turkey Enchiladas&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;3-4 cups chopped turkey&lt;br /&gt;1 can cream of mushroom soup&lt;br /&gt;1/2 C. sour cream&lt;br /&gt;1/2 C. Green Chilli Enchilada Sauce&lt;br /&gt;1 C. Shredded Cheese&lt;br /&gt;1 Package flour or wheat tortillas&lt;br /&gt;&lt;br /&gt;Combine soup, sour cream and enchilada sauce.&amp;nbsp; Reserve enough to cover enchiladas. Mix turkey with remaining miture. Spoon mixture on tortilla shells and roll up.&amp;nbsp; Place seam side down in a baking dish. Cover with remaining mixture and sprinkle with shredded cheese if desired. Bake at 350 degrees for approximately 25 minutes.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Turkey Salad Sandwich &lt;/span&gt;&lt;br /&gt;1/2 - 1 C. chopped turkey&lt;br /&gt;Mayo (as much as you like)&lt;br /&gt;Chopped olives&lt;br /&gt;Chopped onion&lt;br /&gt;Garlic salt, pepper&lt;br /&gt;Cranberries (if you like)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Mix everything together and place on your favorite bread&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Turkey Patties &lt;span style="font-size: small;"&gt;(I got this one from &lt;a href="http://allrecipes.com/Recipe/Leftover-Turkey-Patties/Detail.aspx"&gt;allrecipes&lt;/a&gt;)&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;1 tablespoon vegetable oil&lt;br /&gt;2 tablespoons all-purpose flour&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/8 teaspoon ground black pepper&lt;br /&gt;2 cups half-and-half cream, divided&lt;br /&gt;1 cup cooked, chopped turkey meat&lt;br /&gt;1 teaspoon finely chopped onion&lt;br /&gt;1 cup dry bread crumbs&lt;br /&gt;2/3 cup crushed cornflakes cereal&lt;br /&gt;1 (10.75 ounce) can  condensed cream of chicken soup&lt;br /&gt;&lt;br /&gt;Heat oil in a large skillet over medium high heat. Blend in flour, salt, pepper and 1 cup of half-and-half. Reduce heat to low and simmer, stirring, until thick. Stir in turkey, onion and bread crumbs. Mix well, then shape mixture into 8 small patties and refrigerate to chill for 30 minutes.&lt;br /&gt;&lt;br /&gt;Place cornflake crumbs in a shallow dish or bowl and place remaining 1 cup half-and-half in a second shallow dish or bowl. Heat oil in skillet. Place potatoes in bottom of slow cooker. Add chicken, onions, and garlic.&lt;br /&gt;2. In small bowl mix water with oregano, salt and pepper&lt;br /&gt;3. Pour over chicken and potatoes. Top with oil&lt;br /&gt;4. Cover. Bring to boil. Place lime juice, onion, garlic, cilantro and green chilies in a blender and puree. Stir into rice. Simmer, covered, for about 25 minutes.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Black Beans&lt;/b&gt;&lt;br /&gt;1 can black beans, rinsed&lt;br /&gt;2 Tbl finely mined onion&lt;br /&gt;2 cloves minced garlic&lt;br /&gt;1 tsp ground cumin&lt;br /&gt;1 cup tomato juice&lt;br /&gt;3 Tbl chopped Fresh Cilantro&lt;br /&gt;1 tsp salt&lt;br /&gt;Fry onion, garlic and cumin in a small amount of olive oil. Add beans, tomato juice, cilantro and salt and heat through.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Cafe Rio Pork Barbacoa&lt;/b&gt;&lt;br /&gt;Pork Roast: Put it in a crock pot with a little water and cook until very tender (about 8 hours on low). &lt;br /&gt;&lt;br /&gt;Shred pork and add:&lt;br /&gt;1 can enchilada sauce&lt;br /&gt;2 cloves minced garlic&lt;br /&gt;1 small can diced green chilies&lt;br /&gt;1 can Coke (not diet coke)&lt;br /&gt;1 cup brown sugar&lt;br /&gt;salt to taste&lt;br /&gt;&lt;br /&gt;Cook for one more hour.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Pico de Gallo&lt;/b&gt;&lt;br /&gt;4 ripe Tomatoes&lt;br /&gt;1/2 cup chopped white onion&lt;br /&gt;1 jalapeno, minced (remove the seeds and veins if you don’t like a lot of heat)&lt;br /&gt;1/4 cup cilantro, finely chopped&lt;br /&gt;lime juice, to taste&lt;br /&gt;salt, to taste&lt;br /&gt;Mix everything together.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Creamy Tomatillo Dressing&lt;/b&gt;&lt;br /&gt;1 package Ranch Buttermilk Dressing mix&lt;br /&gt;1/3 cup buttermilk&lt;br /&gt;1 cup Mayonnaise (You can use 1/2 Mayo and 1/2 sour cream)&lt;br /&gt;3 fresh tomatillos&lt;br /&gt;1 cup fresh cilantro&lt;br /&gt;2 cloves garlic&lt;br /&gt;¼ tsp cayenne pepper&lt;br /&gt;&lt;br /&gt;Put everything in a blender and puree.&lt;br /&gt;Refrigerate for a couple of hour.
